All orders are packed and shipped on Monday; order by Sunday at 12 noon MST for pickup on Monday or delivery the same week. Local pickup is always FREE at our warehouse on Mondays from 11am to 3pm.

An irresistible bone-in hind shank, this cut loves to be braised slowly to develop flavor and tenderize. Nestle your finished product into a parsnip puree or mashed potatoes to soak up all the delicious cooking juices. For a little extra flourish garnish with an orange gremolata.
