This farro is 100% organic and grown by family farmers. Farro is a form of the heirloom grain emmer which is an ancient precursor of wheat. It was a cultivated crop from the Middle East dating back 10,000 years. It is a popular grain in the Mediterranean region and is especially used in Italian foods and by Western chefs today. It has a chewy texture and nutty flavor and is delicious in soups, salads, and pilafs. It is semi-pearled which reduces cooking time. Since it is an ancient relative of wheat it does contain gluten but is sometimes tolerated by people with moderate sensitivity to wheat and gluten. It is low in fat and cholesterol and is also a good source of protein and fiber. No need to soak, just simmer in water for 15-20 minutes until desired chewiness.
