This barley is 100% organic and grown by family farmers. Purple Prairie Barley is an heirloom grain that is traced back to the mountains of Tibet and the Nile River Valley. Since it is semi-pearled it has just enough of the bran removed so it cooks faster. It tastes great in soups, salads, and pilafs. It can also be ground down and made into a purple flour to use with other flours in baked goods. This barley is low in fat and rich in vitamins and minerals that support a healthy diet. Since it has a dark purple seed coat it is high in disease-fighting antioxidants. You can soak this barley overnight to reduce cooking time or simmer in water for 25 minutes until tender, then drain.
